Visually stunning, and on the bone for maximum flavour, the mutton rack is a line-up of chops in one place and is an ideal smaller roasting joint for two. This classic joint is an autumnal treat, and boasts rich flavours owing to the lush upland pastures where our flocks mature on diets of wild flowers, herbs, and natural grasses.

All of our Christmas range delivered on 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

How to cook

Ideal for smaller tables, the seven rib mutton rack showcases both the quality of English mutton and our skilled artisan butchery. For a truly memorable meal, try cooking two racks then presenting so the ribs interlock for a "Guard of Honour," and serve with gratin gauphinoise and buttered winter cabbage.

About the cut

Mutton Rack

Known as Carré d'Agneau in French cuisine and butchery textbooks, the rib rack of mutton is cut out at ninety degrees to the spine of the animal, leaving the ribs intact with the prized rib meat attached. The ribs are then French trimmed to leave clean bone at the end of each rib for maximum effect. More commonly simply cut into chops, the rib rack is a favourite of chefs and increasingly in demand.

The Swaledale is the sheep of the Dales. They adorn the signs for the Yorkshire Dales National Park, and can be seen themselves wandering the wild stretches between the valleys in search of foraging. Ours mature slowly, at their own pace, on the heather that grows on the tops. This gives the meat a sweet as well as robust and almost herbal flavour, with the Swaledale providing some of Yorkshire's most renowned lamb and mutton.
