How to cook the rack of mutton

A smaller, convenient-sized rack of mutton, French trimmed for an outstanding finish. The meat on the rack is tender and delicate, dry-aged on the bone for the optimal period to further intensify flavours and tenderise the meat. Be sure to download our recipe tips for the perfect finish. A rack of mutton like this is easy to scale up or down for two, six, or eight, just tweak the timings accordingly when roasting.

About the cut

Mutton Rack

Known as Carré d'Agneau in French cuisine and butchery textbooks, the rib rack of mutton is cut out at ninety degrees to the spine of the animal, leaving the ribs intact with the prized rib meat attached. The ribs are then French trimmed to leave clean bone at the end of each rib for maximum effect. More commonly simply cut into chops, the rib rack is a favourite of chefs and increasingly in demand.

Tasting notes:
Region:
Smallholding Farms In & Around Yorkshire

It's good to eat and enjoy mutton, showing farmers that there is a market for their flocks of mature sheep. For many years, mutton has been one of Britain's best kept culinary secrets but that's slowly changing as people embrace the quality of this meat. Our flocks forage and graze naturally, eating a mix of wild grasses, flowers, herbs, and heathers. This gives the mutton its rich, succulent taste which makes this meat such a delicacy. We want to revive the tradition of eating mutton and help more people realise that this supremely enjoyable meat should be enjoyed. Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
