Description

Taken from mature flocks of sheep of over two years old, this traditional mutton makes for delicious slow roasts, with the bone providing plenty of flavour, and the meat boasting rich character, having grazed on wild grasses, herbs, and flowers. This is a delicious alternative to more popular roasting joints, and a fantastic introduction to our English mutton.

How to cook mutton shoulder

A slow roasting and slow cooking special, and increasingly popular. Try cooking with garlic and anchovy for a sophisticated and fragrant dish, or alternatively try cooking traditionally, by boiling with aromatic vegetables and serving with simple potatoes, and caper and parsley sauce.

About the cut

Shoulder

An absolutely fantastic cut, one that is slowly becoming more popular as people rediscover the qualities mutton has. Ours is sourced direct from flocks left to graze in the near wilderness of the moors of Yorkshire. Matured for seven days in our dedicated dry aging room to tenderise the meat, this mutton shoulder is cut with the bone in for a joint rustic in appearance, but providing consistent flavoursome cooking.

Tasting notes:
Region:
Smallholding Farms In & Around Yorkshire

It's good to eat and enjoy mutton, showing farmers that there is a market for their flocks of mature sheep. For many years, mutton has been one of Britain's best kept culinary secrets but that's slowly changing as people embrace the quality of this meat. Our flocks forage and graze naturally, eating a mix of wild grasses, flowers, herbs, and heathers. This gives the mutton its rich, succulent taste which makes this meat such a delicacy. We want to revive the tradition of eating mutton and help more people realise that this supremely enjoyable meat should be enjoyed. Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
