Description

The merguez is a long, thin traditional hot and spiced lamb sausage originating from the Middle East and North Africa. This sausage is also popular in France for its intense spicing with harissa and toasted cumin and is traditionally cooked over coals to accentuate its smoky flavour. The grass fed British lamb for this sausage is cut from the shoulder and neck for meat with maximum flavour.

Shelf life: minimum 2 days.

How to cook our lamb merguez sausages

Let your sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to split. Don't overcrowd the cooking base and cook through on a medium heat, until rich in colour, caramelised and firm to touch. This sausage works perfectly with grilled lamb chops, couscous and hummus.
