A Christmas staple in South Africa and an out of favour cut coming back into fashion in Britain, Ox Tongue offers fantastic eating quality, especially sliced in sandwiches. Ours are cured using a traditional wet brine for a minimum of five days to deliver the best quality when cooked. The Ox Tongue is part of our commitment to offer cuts that have fallen out of the popular imagination, but showcase some of the best of British artisan butchery, emphasizing the importance of nose to tail butchery, ensuring minimal waste.

All of our Christmas range delivered between the 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre-frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

Shelf life: minimum 6 days.

How to cook pickled ox tongue

Cook with aromatic vegetables to enhance the delicious flavours, or try pressing and slicing cold for deep sandwiches. Ox Tongue is also well suited to serving hot with puy lentils finished with a little parsley, alongside hot mustard and a glass of aged sherry for a delicious meal. Ox Tongue

The Ox Tongue was once a staple of British butchers' boards and was often popular on special occasions for buffets. Demand for Ox Tongue is rising again, and it remains a prized piece of offal. Ours are taken from grass-fed heritage breed beef herds, before being cured in our traditional wet brine. This is to bring out the flavour of the Ox Tongue.

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
