That is, rich flavours owing to the lush pastures of our small farms where our flocks mature on diets of wild flowers, herbs, and natural grasses.
A fantastic alternative to a traditional lamb roasting joints, and ideal for individual portions, the 3 Rib Lamb Rack showcases both the quality of our English lamb and our skilled artisan butchery. For a bespoke meal, roast the mini racks on a high heat to get a rich, golden crust, and serve pink with gratin Dauphinoise, baked carrots, and rosemary scented gravy.
About the cut
Known as Carré d'Agneau in French cuisine and butchery textbooks, the Rib Rack of lamb is cut out at ninety degrees to the spine of the animal, leaving the ribs intact with the prized rib meat attached. The ribs are then divided into smaller portions and French trimmed to leave clean bone at the end of each rib for maximum effect, and small portions of the prized rib meat.

The Herdwick is the symbol of the Lakeland Fells and an internationally recognised chef's favourite known for its well developed taste. This is thanks to the Herdwick's hardy demeanor, living on steep windswept hillsides, gaining weight slowly on naturally foraged food. Their origin is mysterious, seemingly introduced by Norse settlers, though others point to a wrecked ship of the Spanish Armada as the breed's foundation. Such stories complement the romanticism the breed inspires, winning the affection and support of both Beatrix Potter and HRH Prince Charles.
