How to cook

This beef joint is flavoursome though leaner than most, and is good for roasting as well as slow cooking. In stews, be sure to keep it topped up with liquid, while for an Italian bollito misto simmer very slowly. If roasting, serve with traditional roast potatoes, Yorkshire puddings, and creamy horseradish sauce for a Sunday lunch.

About the cut

Silverside

The silverside is cut from the hindquarter of the beast, just above the leg, and gets its name from the 'silver' layer of fibrous tissue that is carefully trimmed off in our cutting room. As the muscle is fairly worked by the beast, there is less marbling here, with the Silverside being leaner than most roasting joints and a popular choice for those who prefer their beef leaner.

About the breed

Dexter

Pint sized ancient Irish cattle

Tasting notes:
gamey, mellow, sweet
Region:
Yorkshire

The smallest breed of cattle in Europe, the Dexter was bred in Tipperary in the 1750s from descendants of the ancient black cattle kept by the early Celts. Dexters were endangered in the 1930s, but now thanks to their ability to mature early feeding on grass and the impeccable eating quality of its neat, small cuts, the breed is bouncing back. This welcome resurgence has been aided hugely by frequent television appearances, and chefs heralding the standout quality of its beef.
