We're excited & delighted to introduce our very own Chicken
Schmaltz made from the skin and fat from our Yorkshire reared high
welfare chickens. Schmaltz is the by-product from Jewish cuisine
when making a highly nutritious and natural 'medicinal' Chicken
Broth. The fat is skimmed and put to one side. Once the Chicken
soup is cooked a generous teaspoon is added to the finished soup
for richness and silkiness. Nowadays it can still be stirred into
soups or stocks but it is also an important cooking fat in modern
cookery. With a high melting point and packed full of roast chicken
flavour a generous spoon goes a long way when roasting or sautéing
potatoes or just for general frying when full flavour impact is
required. Fat is good and it doesn't get better than this jar of
pure poultry goodness.
What the judges said:
"A distinct and homely aroma of roast chicken. Clean and fresh,
this tastes exactly as it should and has a very pleasing non-greasy
finish. A cracking example of a simple ingredient made very well.
No taint of old fat - this is the classic savoury flavour of
chicken skin and fat. Natural tasting, this puts the good into good
fats. We wouldn't say no to this on toast with a pinch of salt.
