Saltimbocca is a dish popular in Italy, Spain, Greece and Southern Switzerland. It was traditionally made using veal. However, over time the recipe has been adapted to use other meats such as chicken, turkey and pork. About the cut
The loin is from the top of the rib cage, where the pork yields lean meat, with creamy fat covering. This is carefully cut out, with the bone removed, before being skilfully chopped into neat steaks. Once a favourite, Pork Loin Steaks are being rediscovered as a great value cut, with all the flavour and succulence other steaks have to offer.

It's good to eat and enjoy meat from free range systems, showing farmers that there is a market for herds reared in an ethical manner. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this by backing free range farming and helping more people realise that we need to safeguard the variety of our farms and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
