Our Guard of Honour, a visually stunning artisanal British lamb centrepiece that tastes as good as it looks making it perfect for an Easter roast. Skilfully prepared by hand, the two French-trimmed free-range rib racks face each other fat side out, to form an arch. Gently seasoned with rosemary, garlic & citrus to enrich the natural flavour of the grass-fed lamb, this is a must-have choice for an outstanding roast this season, whatever the occasion. Roast the Guard of Honour before carving for an impressive yet easy-to-prepare roast this Easter.

About the cut

Rib Rack Of Lamb

Known as Carré d'Agneau in French cuisine and butchery textbooks, the Rib Rack of lamb is cut out at ninety degrees to the spine of the animal, leaving the ribs intact with the prized rib meat attached. The ribs are then French trimmed to leave clean bone at the end of each rib for maximum effect. More commonly simply cut into chops, the Rib Rack is a favourite of chefs and increasingly in demand.

When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural diversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
