Introduction

Method

  1. Wrap chicory in bacon covering as much surface area as possible.
  2. Heat a non stick pan and brown evenly all the sides.
  3. Transfer to a roasting tray/ casserole dish.
  4. Mix together maple, oil and Madeira then pour over chicory add diced butter and thyme.
  5. Bake in preheated oven 135°C for approximately 40 minutes.
  6. Take out chicory carefully then boil juices down to a syrupy consistency ,then pour back over the chicory - finish with a few turns of cracked black pepper.
  7. Best served with roasted game birds, guinea, hen or a tasty free range chicken.
