Ingredients
- 4 chicory (Belgian endive)
- 12 Thinly sliced smoked bacon/ pancetta
- 4tbsp maple syrup
- 50 mil Madeira or sweet sherry
- Splash good olive oil
- Freshly ground black pepper
- 1 sprig fresh thyme
- 50 gram butter unsalted
Introduction
Best served with roasted game birds, guinea, hen or a tasty free-range chickenMethod
- Wrap chicory in bacon covering as much surface area as possible.
- Heat a non stick pan and brown evenly all the sides.
- Transfer to a roasting tray/ casserole dish.
- Mix together maple, oil and Madeira then pour over chicory add diced butter and thyme.
- Bake in preheated oven 135°C for approximately 40 minutes.
- Take out chicory carefully then boil juices down to a syrupy consistency ,then pour back over the chicory - finish with a few turns of cracked black pepper.
- Best served with roasted game birds, guinea, hen or a tasty free range chicken.
