A must have side dish for any Christmas feast.


Method

  1. Bring sugar, liquids and seasonings to the simmer.
  2. Add cabbage, apple, onion & fennel.
  3. Simmer covered for 1 hour.
  4. Remove lid and reduce liquid to syrup & the cabbage is tender & glossy.

Note

  • The cabbage can be prepared & cooked up to 72 hours in advance & reheated when required making for a super simple side dish to serve.

  • The Ingredients
  • • 1 small red cabbage finely shredded
  • • 1 large white onion finely sliced
  • • 1 fennel bulb finely shredded
  • • 1 green apple peeled, cored & sliced
  • • 50 g sugar
  • • 50 g butter
  • • 50 ml red wine vinegar
  • • 250 ml red wine
  • • 2 tbs. redcurrant jelly
  • • Juice & Zest 1 orange
  • • 1 tsp. coriander seeds crushed
  • • Salt & cracked black pepper to taste
