How To Cook Greek Style Lamb Souvlaki

Though traditionally prepared with pork I love the sweet aroma from the marinated lamb, especially through the summer months when lamb is so tender.

Note the lamb can be seared in a hot griddle pan or under a hot grill as well as on the BBQ.

Method for the skewers:
  1. To marinade the skewers, mix the lemon juice, oregano, olive oil and sea salt together, then add few sprigs rosemary.
  2. Pour over the lamb and marinade, cover and leave for a couple of hours turning once after 1 hour.

Method to cook:
  1. Set up a BBQ for direct grilling over high heat.
  2. Char the skewers on all sides. This will take approximately 5 minutes for beautiful pink lamb finished with a squeeze of fresh lemon and a few flakes of sea salt.
  3. Serve the skewers with a Greek style feta cheese, tomato and olive salad, warm pitta breads.

To serve:

  • French fries and Tzatziki.

  • INGREDIENTS FOR THE SKEWERS:
  • • 4 x F&Co lamb skewers
  • • 4 tbls Olive oil
  • • Juice of ½ Lemon
  • • 2 x Cloves garlic finely chopped
  • • Pinch Dried Oregano
  • • Pinch Sea salt
  • • Fresh rosemary sprigs
  • INGREDIENTS FOR SERVING:
  • • 4 Pitta or flatbreads
  • • Heritage tomatoes sliced into thin wedges
  • • Feta cheese diced or crumbled
  • • 1 red onion finely sliced (tossed in a little lemon juice)
  • • Tatziki (shredded cucumber tossed in Greek yoghurt, lemon & dill)
  • • Semi dried Black olives
  • • Lemon wedges to serve
  • • Potato fries (optional)
