We season our merguez with harissa, paprika, and toasted cumin to deliver the classic warmth and complexity that defines this iconic sausage. Slim and punchy, each sausage is hand-tied and packed with character.

How to cook our lamb merguez sausages

Let your sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to split. Don't overcrowd the cooking base and cook through on a medium heat, until rich in colour, caramelised and firm to touch. This sausage works perfectly with grilled lamb chops, couscous and hummus.
