At Farmison & Co, we believe extraordinary beef deserves an exceptional experience. This Father's Day, gift a bespoke sirloin, personalised every step of the way.

To start, choose a your dry ageing period - 32 or 45 days, then select from a choice of native breeds and simply place your order online. Once your order is confirmed, our beef connoisseur butcher will personally select and tag your bespoke sirloin and care for it throughout the ageing process. Before delivery, the recipient will receive a beautifully designed leaflet through the post, detailing all the available cut options. To finalise their selection, they simply contact our expert butchers by phone or email, ensuring every cut is tailored to their taste.

To enhance the experience even further, we'll send exclusive ageing-process photographs and a custom recipe booklet. Each sirloin also comes with our signature cast iron trivet - a timeless and practical piece found in every great kitchen. Whether for a special occasion or an unforgettable gift, it's a one-of-a-kind experience for those who truly appreciate fine beef.

Each sirloin is typically between 9.5kg and 12kg at the start of the ageing process. The sirloin will be cut to your specification creating multiple steaks and roasting joints with the option to receive the bones. The images are typically what can be cut from a whole sirloin.

While the sirloin traditionally matures on the bone, the characteristics of the meat changes resulting in differing flavour profiles. 32 day dry aged will be more mellow and sweeter. 45 day dry aged will be stronger and richer - slightly "gamey", with notes of blue cheese. The dry-ageing process concentrates the flavours through the evaporation of natural water content. Dry ends form protecting the muscle within and will be removed when cutting to your specification.

The breed's ability to thrive in tough climes has seen herds spread to all corners of the globe, but they are most at home in the pristine upland landscapes of Northern England and the Scottish Borders. Here they mature at their own pace on wild grazing. That means flavour is given a chance to develop naturally, with their diet giving the meat its juicy character, and gamey flavour.
