Inspired by the rich, warming flavours of the season, our easy-carve pheasant is a showstopping centrepiece expertly prepared by our in-house butchers. This classic game bird is generously filled with a festive stuffing made from seasoned pork, smoked and dry-cured bacon, sweet cranberries, and succulent prunes, all brought together with a delicate blend of warming spices including nutmeg, pimento, ginger, and orange zest.

Finished with a wrap of dry-cured bacon for added depth and succulence, this pheasant promises tender, gamey meat with every slice-making it an ideal choice for an alternative Christmas feast.

Once introduced by landowners for country shooting, pheasant has a complex flavour thanks to its natural wild diet of berries, acorns, and buds. We've elevated this dish even further by stuffing it with our delicious cranberry stuffing, creating a perfect blend of sweet and savoury. NOTE: May Contain Shot

About the cut

Whole Pheasant

These birds are sourced primarily from the wild moorlands. Game was once a key part of the butcher's business with pheasant in abundance from country shoots. These birds are carefully de-feathered and the innards removed before being delivered fresh to your door. Please note: Whilst care is taken to remove shot, occasionally it can be missed, so please check your bird and remove any pellets before cooking.
