Our July Update from the Dales & Fells

With July here at last, the weather in our neck of woods is at least being a little more consistent, and it's at this time of year the Dales really come into their own. We know we're spoilt up here when people who have lived here their entire lives have to pause to take in the views over the Dales. For us, as meat merchants, it's always good to know that our produce comes from such pristine pastures.

Now is the perfect time for trying our cuts on the barbecue. Meat to be cooked slowly over hot coals should have natural succulence and ample fat cover, ready to be enhanced by the low heat and smoke of the barbecue for melting tenderness and indulgent eating. Our heritage breed meat boasts exactly these qualities with our barbecue range promising plenty of luscious cuts of beef, pork, chicken, and lamb for the grill.

You may have noticed in the last few weeks we added a dedicated barbecue section, where you can find our full range of barbecue produce, plus recipes attached for inspiration.

Jeff Baker our resident chef has also been busy coming up with ideas for the grill, and his marinades are a must try. They are:

Teriyaki

The Japanese classic of sweet taste.

Smokey Cajun Dry Rub Spice Mix

Smokey & spicy, perfect for drying rubbing chicken or beef.

Japanese Miso, Garlic, & Coriander Marinade

Miso enhances everything it touches, particularly good with short ribs.

Traditional Tandoori Spice Mix

The Indian classic, perfect for adding a kick to your barbecue cuts.

Minted Yoghurt, Garlic, & Paprika Marinade

Expect succulent finishes and aroma from this marinade.

It's also been an award winning month for us: Last month the Independent named our Monthly Meat Box the best in the UK. To be honest though, it didn't come as a huge shock! It's become such a favourite in the last year, and because our butchers and chefs always have an active hand in choosing the contents, we know it's the very best we can offer, coming in fresh from the block.

There's also been lots of other exciting cuts crossing the block this month. For starters we can now offer herb fed, grain fed, and free range chicken. The latter two are both sourced from the Yorkshire Wolds, that area of rolling hills in East Yorkshire. The taste each variety offers is simply superb, showing the full value of paying full attention to providence along the food chain.
