Description

Taken from the centre cut of the fillet, this meltingly tender joint of grass-fed beef is perfect for roasting, whether it's a special occasion or you're just looking to impress. The fillet barrel is also perfect if you're looking to make your own Beef Wellington, larder trimmed but still thick, it makes for a perfect finish to your wellington without being overcooked. As with all our grass-fed beef, this cut is sourced from our small network of trusted farmers who do things better. Expect beef that's rich in taste and almost melt-in-the-mouth.

How to cook Fillet Barrel Steak

  1. Remove your steaks out of the packaging, pat dry and bring to room temperature.
  2. Preheat a griddle or heavy based frying pan large enough to hold the meat until it sizzles when you add a drop of oil.
  3. Season the steak liberally with sea salt just prior to cooking & massage with a little poultry fat or dripping.
  4. Sear the steak on all sides over high heat creating a rich, dark crust then reduce to medium heat
  5. Turning frequently cook the steaks for 5 to 6 minutes basting with foaming butter for the final couple of minutes of cooking.
  6. For rare steaks, press the steak with your thumb it should have a slight spring to touch & a core temperature of 50°C before resting.
  7. Alternatively you can pop the steak into a preheated oven (after the initial charring steps) 200°C /180°C fan assisted (gas 6) for approximately 8 minutes.
  8. Leave to rest in a warm place for half the cooking time before carving.

Serve with a rich red wine sauce and a crisp blue cheese and shallot salad.

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
