Their large frame and tremendous fertility means the Blue Leicester is often the 'tup' of choice for farmers cross breeding their flocks of breeds more suited to surviving on the windswept tops of Britain's uplands, such as the Swaledale. Expect mildly flavoured lamb, which is typically well marbled and succulent, making it a perfect all rounder for steaks, chops, and roasting joints.
