Ingredients

  • 125ml Crème fraiche
  • 50ml Semi whipped cream
  • 75ml Creamed horseradish
  • 12 1/2g Finely grated fresh horseradish
  • 1/2tsp English mustard
  • Few drops Tabasco
  • Zest of 1 lemon
  • Juice of 1 lemon

Method

  1. Fold all ingredient together except lemon juice and infuse for 20 minutes
  2. Pass through fine seive
  3. Add lemon and chill
  4. Caution/ do not overwork
