Cockerel is a tasty twist on poultry, and makes for an extra special centrepiece if you're looking to add something different to your Sunday roast. Exclusively for Easter, our Michelin-starred chef Jeff Baker has worked with our master butcher, to bring you a spatchcock cockerel that's ideal for cooking over coals on the barbecue or roasting in the oven.

The meat is succulent and full-flavoured, deeper and richer than chicken, but lighter than goose. We've paired with a dry muscovado and spice brine, making for a sensational flavour to complement the natural flavour of the cockerel. As always, our birds are reared naturally in the idyllic countryside, the birds are free to roam the fields while foraging from nature's larder. These happy birds bring you the most succulent and rich meat. For optimum taste, the meat is game hung to intensify the natural flavour of these carefully reared birds.

This product is frozen and will defrost whilst in transit to you. Ensure this product is thoroughly defrosted before cooking. We strongly recommend cooking within 24 hours for best quality. This product must not be refrozen.

About the cut

Whole Cockerel

Grown to full maturity of 80 days using a slow growing breed of chicken which is carefully selected for its ability to thrive outdoors and live twice as long as commercial chickens. Here, they are free to forage for food which is supplemented with grains as they mature slowly. The process of game hanging naturally intensifies the flavour of the meat to ensure the best texture and rich finish for the whole cockerel.
