Our Steak & Kidney Mix is perfect for long, slow cooking, and is perfectly prepared for cooking a classic Steak & Kidney Pudding or Pie. Delivering deep flavour and meltingly tender texture as the meats cook on low heats. Sourced exclusively from free range animals, reared on luscious pastures, this cut reflects the quality of our heritage breed meat and makes for hearty and wholesome dishes all year round.
Generous pieces of diced beef steak are cut from the chuck of the beast, which is the neck and shoulders of the animal. This is then mixed with our fresh heritage breed lamb kidney at a ratio of 75% prime steak to 25% kidney. The generous marbling and connective tissue breaks down upon slow cooking within the steak, which contrasts perfectly with the firm texture and savoury taste of the lamb kidney.
This traditional butcher's mix is perfect for low and slow cooking to truly allow these cuts to achieve their maximum flavour. It is recommended that you slow cook with a mirepoix of neatly chopping equal amounts of onion, carrot and celery or our preferred choice of celeriac, the root of the celery plus a bay leaf & a sprig of thyme. If you fancy something more heart-warming then try a traditional steamed suet pudding dating back to the 17th century, a true British classic! This is best served with buttery mashed potatoes, seasonal greens and hot English mustard.
