Method
- Place the steaks into a zip bag & pour over enough chipotle marinade to liberally coat the meat.
- Seal & place in chiller, marinade between 4 & 8 hours.
- Remove the meat from the bag then rub away excess marinade ready for grilling.
GRILLING
- Prepare the grill for direct cooking over medium high heat (230°c to 250°c).
- Grill the steaks over direct heat method, placing the meat directly above the burning coals
- With the lid closed, cook to your desired doneness, 2 to 3 minutes each side for medium rare, turning just once. If the steak is getting too charred move to the cool zone & place the lid back on, this will continue to cook the steak without burning.
- If using a probe you want to be looking for a internal temperature of 52°c to 54°c for medium rare
- Remove from the grill and let rest in a warm place for 5 minutes before serving
- Serve with grilled vegetables & a tomato & lime salsa spiked with pomegranate & freshly cut coriander.
