Ingredients
- 6 x Rashers of back bacon, diced ( I used Rare Breed Smoked Bacon)
- 6 x Medium sized free range eggs
- Small handful of Parmesan or Pecorino Sardo cheese, finely grated
- Freshly ground black pepper
- You will also need 6 large paper fairy bun or muffin cases and a metal muffin tray.
Introduction
A convenient and versatile snack.Method
- Pre-heat oven to 170°C, Gas 3.
- Dry fry diced bacon on a medium heat and set aside.
- Place paper cake cases in muffin tray and spread cooked bacon pieces evenly onto base of each case.
- Carefully break one egg into each case on top of spread bacon.
- Garnish with a fine covering of grated cheese and a little black pepper.
- Place on the middle shelf of oven for 10-12 mins.
- Remove and serve.
Gaynor's Tip: These delightful buns are novel and so versatile as a convenient breakfast snack or served with salad for lunch. They are most easily eaten from the case with a spoon although with careful effort can be removed.
