Ingredients

  • 2 x pork tenderloin fillets
  • 4 Pitta or flatbreads
  • Tzatziki (shredded cucumber tossed in Greek yoghurt, lemon & mint)
  • Lemon wedges to serve
  • Ingredients for marinade
  • 50ml fruity virgin olive oil
  • Juice & zest of 1 Lemon
  • 2 x Cloves garlic finely chopped
  • Pinch Dried Oregano
  • Pinch sweet paprika
  • Pinch dried chili flakes
  • Pinch Sea salt
  • Ingredients for Greek salad
  • Vine tomatoes sliced into wedges
  • red onion finely sliced (tossed in a little sea salt & lemon juice)
  • 1⁄2 cucumber cut into wedges & salted to remove excess juice
  • Kalamata black olives
  • Virgin olive oil
  • Dried oregano
  • Sea salt

Introduction

Traditionally prepared with pork I love the sweet aroma from the marinade, especially through the summer months when I can cook on the open fire. Other cuts can be used such as a sliced shoulder or loin. It's a really simple dish to prepare & evokes all those memories of Greek holidays in the sun!

Method

To marinade the skewers, mix the ingredients together, then brush the pork with the marinade, cover & leave for a couple of hours, stirring once after an hour. Set up a BBQ for direct grilling over high heat. Char the skewers on all sides; this will take approximately 5 minutes, then finish with a squeeze of fresh lemon.
