- 2 x pork tenderloin fillets
- 4 Pitta or flatbreads
- Tzatziki (shredded cucumber tossed in Greek yoghurt, lemon & mint)
- Lemon wedges to serve

- 50ml fruity virgin olive oil
- Juice & zest of 1 Lemon
- 2 x Cloves garlic finely chopped
- Pinch Dried Oregano
- Pinch sweet paprika
- Pinch dried chili flakes
- Pinch Sea salt
- Ingredients for Greek salad
- Vine tomatoes sliced into wedges
- red onion finely sliced (tossed in a little sea salt & lemon juice)
- 1⁄2 cucumber cut into wedges & salted to remove excess juice
- Kalamata black olives
- Virgin olive oil
- Dried oregano
- Sea salt
Introduction
Traditionally prepared with pork I love the sweet aroma from the marinade, especially through the summer months when I can cook on the open fire. Other cuts can be used such as a sliced shoulder or loin. It's a really simple dish to prepare & evokes all those memories of Greek holidays in the sun!Method
To marinade the skewers, mix the ingredients together, then brush the pork with the marinade, cover & leave for a couple of hours, stirring once after an hour. Set up a BBQ for direct grilling over high heat. Char the skewers on all sides; this will take approximately 5 minutes, then finish with a squeeze of fresh lemon.
