Ingredients
- 4 To 6 Rashers Bacon
- 4 X Slices Thick Cut Country Style White Bread
- 50 G Butter To Spread & Fry With
- 2 X Free Range Duck Or Hens Eggs
- 2 X Ripe Vine Tomatoes Sliced 5mm Thick
- Pinch Sugar
- Salt & Ground Black Pepper To Season
Method
- To start dust the tomatoes with a little icing sugar, sea salt and black pepper
- Blacken them on one side in a hot non - stick pan then leave in a warm place
- Wipe the pan clean then sear the bacon until golden brown on both sides, leave to one side in a warm place
- Next spread the bread with a thin layer of butter
- Use the remaining butter to fry the eggs over a gentle heat until the whites are set and the yolk still runny
- Place a layer of tomatoes onto bread
- Top with the bacon rashers
- Add the fried egg, season with salt and pepper then top with remaining bread
- Carefully cut into half and serve with your favourite breakfast relish!
