Ingredients
- 750g pork belly cut into cubes, boneless & rind off
- 1 punnet shiitake mushrooms, stems removed & blanched in boiling water for 30 seconds
- 2 tsp. sea salt
- 2 tsp. brown sugar
- 1 tsp. szechuan pepper crushed
- 1/2 tsp.garlic granules
- 2 tbls. oil
- Small bunch chives finely chopped
Method
- Set airfryer to 200°C.
- In a large bowl, combine the oil, brown sugar, garlic powder, salt and Szechuan pepper.
- Add the pork belly pieces to the oil mixture, covering each piece.
- Lay the pork belly pieces in a single layer in the basket of your air fryer and cook the pork belly cubes for 10 minutes, then add the shitake mushrooms and continue to cook for another 8 to 10 minutes shaking everything a couple of times whilst cooking.
- Remove onto a warm serving bowl and scatter with chopped chives.
To serve
Wok fried chinese greens, sticky rice and Sriracha mayo.
