Ingredients
- 6 x 85 g Farmison & Co Beef Fillet Medallions
- 20 ml peanut or light olive oil
- 50 g clear honey
- 75 ml light soy sauce
- 40 ml rice wine vinegar
- 4 x spring onion finely sliced
- 1 x red pepper finely sliced
- 30 g root ginger finely sliced (blanched in boiling water for 30 seconds)
- 125 g sugar snap peas finely sliced
- Small bunch coriander chopped
- 1 x lime cut in to wedges
Introduction
Enjoy these small round disks of utterly tender fillet medallions and delicious, light dressing for a quick and easy mid-week meal.Method
- Pre heat your heavy based frying pan until it sizzles when you add a drop of oil
- Season the meat just prior to cooking
- Massage the beef with a little peanut or olive oil, creating a very thin layer over the meat
- Cook over high heat turning the medallions only once after a rich, golden crust has formed
- Cook 2 minutes each side for medium rare
- Leave to rest in a warm place at least 2 or 3 minutes
- Mix the honey, soy , a squeeze of lime & vinegar to create a dressing
- To finish toss the fine strips of vegetables & ginger in the remaining oil for 2 minutes then add the beef back to the pan
- Deglaze with the dressing
- Dress with fresh coriander and fresh lime
