The lamb rib eye chop is cut from the collar and is inspired by modern trends in butchery that seek to present new ways of preparing lamb. With plenty of intra-muscular fat this cut lends itself to slow cooking and grilling. Try popping on the barbecue for a full-flavoured chop with wonderful succulence and flavour due to the generous marbling of the collar. The rib eye is also well served by slow cooking in the style of an Irish Stew or a Lancashire Hot Pot with plenty of onions and vegetables.

How to cook Lamb Rib Eye Chop On The Bone

This steak is very versatile, being well suited to grilling, frying, slow cooking, or griddling. If frying cook for four to five minutes on a high heat, and serve with charred vegetables and a punchy salsa verde.

When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming.
