Description

Our free-range beef brisket is a traditional favourite that's picking up popularity in the modern-day kitchen. Unlike our hand-tied beef brisket, we've left this one on the bone for utmost flavour and melting tenderness that lends itself to a long and slow roast. Cut from the breast of the beast, this joint has been dry-aged under the watchful eye of our Master Butchers, to enhance the natural qualities of the beef. Pot roast and serve with bone marrow mash and charred cabbage, or set the barbecue to low and slowly grill before pulling the tender meat off the bone and serving with seasonal side dishes.

How to cook bone in brisket joint

A favourite of chefs for pot-roasting, try slow cooking alongside seasonal vegetables and herbs for melt in your mouth quality, and serving with buttery mash and roast carrots. If slow roasting in the oven, Brisket can be served as a Sunday Lunch centerpiece, however is also ideal for marinating and serving as a barbecue special.

About the cut

Brisket Joint

The brisket is cut from the forequarter of the beast from the breast of the animal, before being trimmed, rolled, and tied on the butcher's block. A great value joint, and popular all year round, half of our briskets are taken aside and cured with salt, while these joints here are left to dry age and left in their natural state for authentic beef flavour.

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
