This boneless quick fry special has been thinned in width on the butcher’s block to promise tenderness and subtle flavour, perfect for a quick fry. Made strictly with ethical reared herds, the Escalope is the perfect introduction to the quality of our milk fed English veal.
A European-style cut popular with chefs. Due to the close texture of veal, and because our veal is not dry aged for long to preserve its character, this is one of the first cuts the butcher takes. This requires great skill and practice to cut out neat pieces, while these escalopes have been thinned on the butcher’s block to lend themselves to quick frying.
