The meat is like all game, well developed in flavour with close texture, and a joy to prepare with the gamey meat paired with natural seasoning, apple, and fennel.
Let your sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to explode.
