With rich, stand out flavour, our Pork Fillet Esclope showcases the brilliant quality of our native breed free range pork, allowed to mature at their own pace on hearty diets, and sourced exclusively from traditional pig farms.

The Yorkshire Pig is the world’s most popular breed. They’ve been exported to all corners of the globe due to their ability to get big quick, and provide consistent pork with strong, porky flavour. When sourcing our Yorkshires, we source hogs who are reared to maturity at a slow pace, in the great outdoors. This ensures the melting succulence when cooked, and the beautiful creamy character.

Tasting Notes: Rich, Succulent, Creamy

A French culinary term, escalope is a piece of boneless meat that has been thinned out, usually for the chef to then fry or grill. Our Pork Escalope are cut from the fillet, where our native breed hogs yield lean meat, but with the rich colouring that lets us know that it's of the best quality. These are matured for at least 14 days to concentrate the taste in our dedicated dry aging room, before being carefully cut and trimmed.

A chef's favourite with its lean character, and a great introduction to the rich flavours that our native breed hogs offer. Pork Loin Escalope is very versatile, making for a superb breaded Wiener Schnitzel. Alternatively it can fried on a high heat for three to four minutes each side, before being served with creamy buttery mash, fine greens, and toasted almonds.
