Our mutton koftas are created by our in house Executive Chef Jeff Baker using perfectly ground spices inspired by the north of Africa. Cumin, Harissa du bon cap, coriander and fennel seeds are all blended with our rich and tasty Swaledale mutton mince to create a perfectly seasoned nugget of deliciousness. The Swaledale is the sheep of the Dales. They adorn the signs for the Yorkshire Dales National Park, and can be seen themselves wandering the wild stretches between the valleys in search of foraging. Ours mature slowly, at their own pace, on the heather that grows on the tops. This gives the meat a sweet as well as robust and almost herbal flavour, with the Swaledale providing some of Yorkshire’s most renowned lamb and mutton.

The kofta is a type of meatball found in the Middle East and the Indian Subcontinent. Typically, the meat is mixed with spices or onions. Koftas are becoming an increasingly popular option on British butchery boards, with lots of different styles now available.
