Ingredients
- 12 x Goosnargh chicken skewers
- 1/2 Cup chopped coriander stems
- 1 tsp White pepper
- 2 tsps Cumin seeds
- 6 x Cloves garlic roughly chopped
- 1 tbsp Turmeric
- 2 tbsps Light brown sugar
- 1 tbsp Vegetable oil
- 1/4 Cup fish sauce
- 1/2 Cup coconut milk
Introduction
I had the best ever pork skewers while on a jungle trek in Thailand they were cooked over an open fire. This is a perfect summer BBQ recipe.Method
- Blitz the coriander stems, white pepper, cumin seeds, garlic, turmeric and sugar in a blender until it forms a paste. Don't blend too much it's preferable if a little lumpy.
- Mix in the fish sauce and coconut milk.
- Cover the skewers with the marinade and refrigerate for 2 - 4 hours.
- Take them out for half an hour before cooking; barbecue for 10 minutes until the meat is white throughout.
Tip: Pre-marinade the chicken in coconut milk for a more distinctive flavour.
