I had the best ever pork skewers while on a jungle trek in Thailand they were cooked over an open fire. This is a perfect summer BBQ recipe.


  1. Blitz the coriander stems, white pepper, cumin seeds, garlic, turmeric and sugar in a blender until it forms a paste. Don't blend too much it's preferable if a little lumpy.
  2. Mix in the fish sauce and coconut milk.
  3. Cover the skewers with the marinade and refrigerate for 2 - 4 hours.
  4. Take them out for half an hour before cooking; barbecue for 10 minutes until the meat is white throughout.

Tip: Pre-marinade the chicken in coconut milk for a more distinctive flavour.
