A Spatchcocked Chicken is simply a chicken that has had its backbone removed, allowing it to be laid flat on the BBQ or in the oven. The advantage of this is that it can be marinated much more easily, allowing the marinade to infuse the meat with flavour and aroma.


  1. Remove Chicken from chiller ready to marinade
  2. Mix marinade ingredients together then massage into Chicken & leave overnight
  3. Rub away excess marinade & roast skin side up 200 oc for 90 minutes.
  4. Serve with seasonal salad & an extra squeeze of lemon
