Precook the mangetout by plunging the vegetables in boiling water for 1 minute, drain and leave to one side. Heat a dry wok, add the sesame seeds and toast until golden brown, spoon the seeds into a bowl and leave to one side. Add a splash of oil to the wok and fry the shallots, chilli and lemon zest over a medium heat for a few minutes until the shallots start to soften. Season the pork with the salt and pepper. Increase the heat in the pan, add the pork and fry for a few minutes until the pork is golden brown. Stir in the mangetout, sesame seeds, butter and lemon juice.
