Introduction

A delicious supper dish, so easy to prepare and full of Caribbean flavour.

Method

  1. Blend all the ingredients for the marinade to a smooth paste in food processor
  2. Add to beef fillet strips, mix through, cover with cling film and allow to stand for approximately half an hour
  3. Mix coconut and breadcrumbs together and spread evenly onto a plate
  4. Press breadcrumbs onto sliced plantain ensuring an even covering on both sides
  5. Add knob of butter to shallow pan and melt
  6. Add plantain and cook for 2-3 mins each side until golden in colour
  7. Remove from pan and keep warm
  8. Add 1tbs olive oil to pan on high heat
  9. When pan is really hot add beef, moving around the pan and turning
  10. Cook for approximately 2-3mins (I like the beef quite rare, cook slightly longer if you prefer)
  11. Serve beef strips with plantain on the side
