Ingredients
- 400g Farmison & Co Beef Strips
- 2tbs Olive oil plus 1 additional tbs to cook beef
- 1dsp Onion salt
- 1 x Garlic clove
- 1tsp Ginger puree
- 1tsp Dried thyme
- 1tsp Chilli powder (mild or hot depending on your preference)
- tbs Ground all spice
- 1 x Spring onion sliced
- ½ tsp Cinnamon
- Pinch of salt
- 2 x Fresh plantain diagonally sliced (if you can’t get plantain, use under ripe banana but it will be sweeter)
- 25g Fresh breadcrumbs
- 15g Coconut
- 1 Knob of butter
Introduction
A delicious supper dish, so easy to prepare and full of Caribbean flavour.Method
- Blend all the ingredients for the marinade to a smooth paste in food processor
- Add to beef fillet strips, mix through, cover with cling film and allow to stand for approximately half an hour
- Mix coconut and breadcrumbs together and spread evenly onto a plate
- Press breadcrumbs onto sliced plantain ensuring an even covering on both sides
- Add knob of butter to shallow pan and melt
- Add plantain and cook for 2-3 mins each side until golden in colour
- Remove from pan and keep warm
- Add 1tbs olive oil to pan on high heat
- When pan is really hot add beef, moving around the pan and turning
- Cook for approximately 2-3mins (I like the beef quite rare, cook slightly longer if you prefer)
- Serve beef strips with plantain on the side
