The combination of beef and oysters is traditional and can be dated back to the 1890's in the United States. It is a luxury dish that can be found in Australia, New Zealand and South Africa and referred to as


  1. Mix the salt and pepper together on a plate and dust the steaks in the mixture.
  2. Heat the olive oil in a heavy-based frying pan and fry the steaks for 3 minutes each side turning only once.
  3. Remove the pan from the heat and allow the steaks to rest in the pan for 5-10minutes.
  4. Meanwhile, pour the oysters and their juices into a hot sauce pan and poach them for 30 seconds, just so they are lightly cooked.
  5. Serve with an oyster on top of each steak, with a drop of olive oil and a squeeze of lemon on each oyster.
  6. Garnish with fresh herbs.
