Ingredients
- 2 x Native Dexter fillet steaks about 160g each (Highland and Longhorn work well)
- 1tbsp Olive oil
- 2 x Fresh oysters, in their juices
- 1 x Lemon, for squeezing
- Freshly grounded black pepper
- Good quality British sea salt
- Fresh herbs of your choice to garnish
Introduction
The combination of beef and oysters is traditional and can be dated back to the 1890's in the United States. It is a luxury dish that can be found in Australia, New Zealand and South Africa and referred to asMethod
- Mix the salt and pepper together on a plate and dust the steaks in the mixture.
- Heat the olive oil in a heavy-based frying pan and fry the steaks for 3 minutes each side turning only once.
- Remove the pan from the heat and allow the steaks to rest in the pan for 5-10minutes.
- Meanwhile, pour the oysters and their juices into a hot sauce pan and poach them for 30 seconds, just so they are lightly cooked.
- Serve with an oyster on top of each steak, with a drop of olive oil and a squeeze of lemon on each oyster.
- Garnish with fresh herbs.
