Ingredients
- 2 x rib eye steaks
- 2 tbls. Coffee rub
- 20g unsalted butter
- Bourbon sauce to serve
- 2 corn on the cobs
- Ingredients for rub (keep excess in a sealed jar up to 1 month)
- 25g Smoked Sea Salt
- 20g Muscovado Sugar
- 5g Paprika
- 5g espresso coffee powder
- 3g Chipotle Chilli Flakes
- 3g Ground Cumin
- 3g mustard powder
- 2g Onion Powder
- 1g cracked black pepper
- Ingredients for sauce
- 100ml strong fresh brewed coffee
- 80g soft brown sugar
- 2 tbls. Cider vinegar
- 4 tbls. Cloudy apple juice
- 4 tbls. Tomato ketchup
- 4 tbls. Worcester sauce
- 2 strips orange peel
- 1 tsp. coffee rub
- Bourbon to taste.
Method
For the Rub:
- Blend spices together.
For the Sauce:
- Boil all ingredients together except the Bourbon & reduce to a syrup, pass through a fine sieve.
- Add Bourbon to taste & reserve.
Finally:
- Remove steaks from their packaging & the fridge 1 hour before cooking & apply a thin layer of the rub all over the steaks
- Char the steaks over white-hot burning coals on a BBQ, 3 to 4 minutes each side, move to cool zone to continue cooking if getting too dark.
- Leave to rest for 5 minutes before serving.
- Pour over the Bourbon sauce and enjoy
