Ingredients
- 4 x Greek style lamb leg skewers
- 2 tbls. Strained Greek yoghurt
- Pinch sumac
- Mixed salad of chopped tomatoes, pomegranate seeds red onion, cucumber, mint & basil.
- Cold pressed virgin olive oil to serve
- 1 unwaxed lemon cut into wedges to serve
Introduction
A super easy dish using F&Co Heritage Breed Lamb. Our Lamb Skewers are marinated by us in delicious Greek herbs and spices; simply cook and create a fresh salad to enjoy.Method
- This recipe can be barbecued or grilled.
- Remove the skewers out of the packaging and bring to room temperature.
- Pre-heat your BBQ until the coals are white hot or a griddle pan until it is smoking hot.
- Grill 2-3 minutes each side until nicely charred then turn frequently until the lamb is cooked to your liking.
- Leave to rest in a warm place for a few minutes before serving.
to serve:
Serve on a fresh salad of ripe tomatoes, pomegranate & mint, with a dollop of labneh sprinkled with the sumac & giant couscous
