Ingredients
- 4 x Thai spiced chicken thigh skewers
- 1 lime
- 50 g crunchy peanut butter
- 10 ml sriracha
- 10 ml light soy sauce
- 1 lime + wedges to serve
- Pinch light brown sugar
- Few drops sesame oil
- Spring onions charred over high heat
Introduction
A delicious and easy to cook BBQ dish using F&Co Yorkshire Chicken. Our Chicken Thighs are marinated In Thai-style herbs & spices; simply cook and follow this beautiful summer recipe & serve.Method
For the skewers
- Remove the skewers out of the packaging and bring to room temperature.
- Pre heat your BBQ until the coals are white hot on one side & a indirect heat on the other side or a griddle pan until it is smoking hot.
- Grill 3-4 minutes each side until nicely charred then transfer to the indirect side & continue to cook for approximately 15 minutes until fully cooked through or place into a pre heated oven 170°c fan assisted or 190°c without a fan (gas 5).
- Leave to rest in a warm place for a few minutes before serving.
For the dipping sauce
- Mix together the peanut butter, sriracha, soy, sugar, juice of 1 lime & few drops of sesame oil.
