Method
Roast:
- Remove your parcels from the chiller and place onto a roasting tray.
- Pre heat the oven to 180°C fan assisted or 200°C without a fan (gas 6).
- Season the skin with a little sea salt & a drizzle of oil.
- Place in the centre of the oven & roast for 25-30 minutes reaching a minimum core temperature of 70°C.
- Rest for a few minutes before removing strings then serve.
Serving Suggestions:
Creamed potatoes, fine green beans & sage infused roasting juices.
