Ingredients

  • 10 g Coriander seeds
  • 5 g Cumin seeds
  • 2 cloves
  • 10 black pepper corn
  • 3 cardamom pods
  • 1/2 cinnamon stick
  • 1 bay leaf
  • 10 g ginger paste
  • 5 g Turmeric powder
  • 5 g Red chilli powder
  • 5 g Paprika
  • STAGE 2
  • 50 ml natural yoghurt
  • 10 g ginger paste
  • 2 cloves garlic crushed
  • Freshly squeezed lemon juice to taste
  • 20 ml pomace oil ( light olive oil)
  • Season with salt to taste

Introduction

A spicy marinade perfect for adding a kick to you cooking, please note there are two stages to adding the ingredients together.

Method

  1. Toss all dry spices over a low heat for 5 minutes in a dry non stick pan
  2. Blitz to a powder
  3. When ready to use mix with stage 2 ingrediants
  4. Marinade meat overnight
  5. Poultry, pheasant, pork, goat, lamb
  6. Rub away excess marinade pre cooking
  7. Bbq, grill, roast, griddle
