Slowly nurtured with a much longer life that other commercially reared chickens, this really has to be tasted to appreciate the exceptional quality. Perfect for roasting whole as a Sunday lunch, with plenty for leftovers.
Our chickens are sourced from Loose Birds in North Yorkshire, where the birds mature slowly, naturally, to yield the finest ethically reared meat. The difference in quality when set against more mass produced chicken is dramatic, with this poultry ordinarily reserved for the restaurant trade because of its superior flavour and natural succulence.
A nicely roasted chicken always goes down well with its winning combination of white and brown meat and crisp skin. You can get a lot from one chicken. Serve it first roasted, pick off any remaining meat and use for salads, pack lunch sandwiches, risotto, then boil up the carcass with any vegetables or herbs to make a stock for soup.
