Crowning is the process of removing the back bone & thighs from a bird leaving just the breast meat which sits proudly like a 'crown', hence its name. This allows the bird to cook evenly but for a shorter period of time than if the legs were still attached. More often than not, roasting a whole bird results in overcooked breast meat but perfectly cooked leg & thigh meat.
