Introduction

A light summery alternative to the classic Nicoise French Salad and hails from the Touraine region of France.

Method

  1. Cook the beans and potatoes in separate pans of salted water until tender.
  2. Drain and cool, cut into very small pieces.
  3. Separate the lettuce leaves, wash and drain well and shred finely.
  4. Add the lettuce to the beans and potatoes and stir in the crème fraiche and lemon juice.
  5. Season with salt and pepper and decorate with the tomato slices.
