Method
- Make the vinaigrette in advance
- Simply whisk together the oil, chilli if using, cumin, garlic, vinegar & season to taste
- Next burn the peppers over an open flame until fully burnt all over
- Place in a bowl ice-cold water and rub away skin
- Remove from water
- Pat dry and remove seeds & stem
- Slice into thin strips and mix with the dressing
- To cook the sausage take a heavy based non - stick fry pan and cook turning frequently over a medium heat for 8 to 10 minutes forming a rich colour and they should be firm to touch
- Place the bread in a pre - heated oven 180 oc for 3 to 4 minutes, remove and slice in half through the centre
- Slice the sausage lengthways and place onto bread
- Cover with dressed peppers and chopped coriander then top with remaining bread and enjoy!
