Method

  1. Make the vinaigrette in advance
  2. Simply whisk together the oil, chilli if using, cumin, garlic, vinegar & season to taste
  3. Next burn the peppers over an open flame until fully burnt all over
  4. Place in a bowl ice-cold water and rub away skin
  5. Remove from water
  6. Pat dry and remove seeds & stem
  7. Slice into thin strips and mix with the dressing
  8. To cook the sausage take a heavy based non - stick fry pan and cook turning frequently over a medium heat for 8 to 10 minutes forming a rich colour and they should be firm to touch
  9. Place the bread in a pre - heated oven 180 oc for 3 to 4 minutes, remove and slice in half through the centre
  10. Slice the sausage lengthways and place onto bread
  11. Cover with dressed peppers and chopped coriander then top with remaining bread and enjoy!
