Method
- Place the pork into a zip bag & pour over enough chipotle marinade to liberally coat the meat. Reserve the rest for basting the pork whilst grilling.
- Seal & place in chiller, marinade between 4 & 6 hours.
- Remove the pork from the bag then rub away excess marinade ready for grilling.
GRILLING
- Prepare the grill for direct cooking over medium heat (190°c to 220°c).
- Grill the pork over direct medium heat, keeping the lid closed as much as possible, until the outside becomes rich & caramalised and the centre just pink
- This will take approximately 12 to 15 minutes, turning every 4-5 minutes & basting each time you turn the pork with the remaining marinade.
- The internal temperature of the pork if using a meat probe should be 62°c when fully cooked. Remove from the grill and leave to rest for 5 minutes before serving.
- Serve with refried beans, fresh coriander, lime wedges & guacamole.
