Ingredients
- 750g sweet potatoes peeled and cut 1 inch chunks
- 500g butternut squash peeled and cut 1 inch chunks
- 400g picked cooked leftover Christmas turkey meat (white & brown)
- 1bunch spring onions cut on the angle
- 2 tsp. sweet paprika
- 1 tsp. ground cumin seed
- 1 tsp. fennel seed
- 1 tsp. cinnamon
- Pinch saffron (optional)
- 2 finely grated zest and juice limes
- 2 cloves garlic crushed
- Sea salt
- 150 ml light poultry stock
- 2 tbsp. chicken schmaltz or olive oil
- Small bunch coriander
- Sour cream to serve

- Preheat the oven to 200°C fan assisted or 220°C without a fan (gas 7).
- Place the cut sweet potatoes, squash and spring onions into a large shallow roasting pan and sprinkle with the spices and lime zest, garlic, salt and the stock.
- Drizzle over the chicken schmaltz or olive oil, then bake for 45 minutes or until just cooked, then mix the leftover Christmas turkey and lime juice into the pan. Carefully toss everything together then bake for an additional 10 minutes making sure the turkey has fully heated through.
- Finish with picked coriander and a dollop of sour cream.
